Cut two slices of carrot as in this video and place one under a microscope. Place the other slice in salty water before placing it under a microscope as well. You will notice that the cells in the carrot slice that was not placed in salty water are very large and robust and full of water. Now, place the slice that was placed in salty water under the microscope. You will notice that the cells in this slice are much smaller, and this is because of a semi- permeable membrane that allows water to pass through. What happens is that the higher concentration of salt on the outside seek equilibrium and therefore, water leaves these cells and this shrinks them down, leaving the carrot flexible. If you do not have a microscope, kindly watch the view and you will be amazed.

What you're looking at here is a slice of freshly sliced carrot that the cells that you see here under the light microscope are very large and robust and very full of water. Now, this next clip which you're looking at is a slice from the same carrot that was put in a solution of salt water, noticed the cells are much, much smaller. This is because of the semipermeable membrane that allows water to pass through. What happens is the higher concentration of salt on the outside will seek an equilibrium, so water will leave these cells and shrink them down and make the carrot flexible.
